BASIC SPONGE CAKE

Ingredients:
Self raising flour or plain flour by adding 3/4 tsp baking powder- 85 gms or 2/3 cup
Eggs - 3 large
Sugar - 1/2 cup
Butter melted - 4 tbsp
Hot Water - 2 tbsp
Vanilla essence - 1 drop

Preparation:
1.Grease a baking tin with oil or butter and line with parchment paper.Preheat the oven at 180 degree celcius or 400 F.
2.In a deep bowl, add 3 eggs and sugar ,beat well until thick, pale and double the quantity in an electric mixer for upto 10 minutes.
3.Add a drop of vanilla essence,fold in the flour slowly and carefully without knocking out the air with a spatula.
4.Fold in 2 tbsp of hot water and melted butter,combine well slowly and gently.


5.Pour the mixture into the prepared baking tin .

6. Bake in the pre heated oven for upto 15 - 20 minutes or until the cake is baked well and starts to brown and is  springy to touch or when a tooth pick inserted comes out clean without sticking.
