CARROT HALWA/ GAJAR KA HALWA ...step by step.....



Ingredients:
Carrot fresh grated - 6 medium size (i got almost 5 cups when grated)
Water- 1 cup
Milk - 1 cup
Sugar - 1  and 1/2 cups ( add according to ur preference)
Milkmaid - 2 tbsp ( can use milkmaid 1 tin & reduce sugar)
Cardamoms crushed - 5
Ghee - 2 tbsp
Rose water - 1 tbsp
Nuts (any,i used just a mix of pistachios and badam pieces )-2 tbsp or as much u prefer


Preparation:
1.Wash and peel the carrots.

2.Usuing a grater ,grate the carrots.
3.In a wide pan, add the grated carrots and 1 cup of water, cover with a lid and cook on medium flame for 5 to 10 minutes.
4.When the water has been absorbed and carrot is soft, open the lid.


5.Add 1cup of milk and cook without lid in medium to high flame till the carrots are soft .
6.Add sugar and milkmaid ,cook in medium to high flame until the water is absorbed .(it takes 15 to 20 min)


7.At this stage, add ghee, crushed cardamom and rose water and mix well,cook for 5 minutes or until moist.

8.When ghee starts leaving from sides,stop  cooking and add nuts.if u want dry, can cook further.

9.Serve warm or cold.( I dont refrigerate,i  prefer making fresh and using same day by keeping outside)
