UNNIAPPAM/KAARAPPAM


Ingredients:
White rice/ Basmati rice - 1 cup soaked 4 to 6 hours
Boiled rice - 3/4 cup
Coconut grated - 1/2 cup
Jaggery - 4- 5 cubed  pieces crushed(according to the sweetness u need)
Jeerakam - 1 tsp
Cardamom - 1/2 tsp powdered
Salt - a pinch
Water - as needed
Oil - to deep fry

Preparation:
1.In a mixer grinder,grind the soaked rice ,along with boiled rice,grated coconut and crushed jaggery(Put jaggery into a zip lock bag and beat with a wooden spatula,until crushed),adding a little water(add water accordingly,the batter must not be too thick or watery,a bit pouring consistency).Add salt,cardamom powder and jeerakam to it.


2.Heat oil in a appakkaara by filling every hole with oil.
3.When the oil is hot,keep in medium flame and add the batter in each hole upto 3/4 th.
5.After few seconds,when sides turn brown, flip it to the other side and cook till brown on medium flame.

6.Remove and drain when they are golden brown.
