MALABAR MUTTON DUM BIRIYANI
After a long gap of 9 years I am back to my blog with my first recipe mutton biriyani with the updated version.
Ingredients :
For Biriyani masala
Mutton :500 g
Onion chopped :4 medium
Tomato: 2 medium
Green chilly : 4 to 6 (as spicy )
Garlic pods: 7
Ginger : 2small round pieces
Coriander leaves : 10
Garam masala : 1 tbspn
Turmeric :1 tsp
Salt :as required
Oil :as required
Whole garam masalas like ( cardamom, cloves and cinnamon )
Pepper powder :3 tsp
For ghee rice:
Ghee rice - 3 cups ( Jeerakashala or Kaima)
Boiling Water ; 5 cups
Garam masala (cardamom, cloves, cinnamon) a few
salt as per taste
lemon juice : 2 tbspn
For Garnishing :
Ghee: 1/2 cup
Onion :1 medium
Carrot :1
Cashew nuts :1/2 cup
Raisin :10
Curry leaves and Coriander leaves few
Method to prepare Biriyani Masala
1.Wash mutton well in water by adding a pinch of salt and 1/2 a lemon juice (to avoid the smell)and drain in a colander.
2.Chop the onions and tomatoes, grind together garlic,ginger , green chillies and coriander leaves until its crushed.
3.In a pressure cooker add oil and saute the onions in medium flame until brown n translucent
4.Add the whole garam masala and saute in with the crushed paste .
5.Add tomato , turmeric powder and salt as required and saute .
6.When the tomatoes start to soften ,add mutton ,garam masala powder and pepper powder.
7.Cook for atleast 7 whistles and switch off, wait till the pressure is completely down.
8.Open the cooker and cook till the water is dried completely or till the mutton gets softened.
Method to prepare rice:
1.Wash the rice well and drain with a colander and keep aside.
2. Take a vessel and add oil and ghee , add onion and fry till brown, remove and keep aside .To the same oil add the carrot and fry few minutes and remove, again add the nuts ,curry leaves and raisins ,fry and remove and keep aside.
3.Now mix coriander leaves with the fried ingredients and add garam masala to it ,cover and keep aside.
4.To the same oil add the drained rice and fry few minutes.
5.Add the boiling water and mix,Now add the whole masala ,add salt and lemon juice and wait to boil in full flame.
6.When the rice starts to boil reduce the flame to medium and cover the rice with a lid.
7.Wait untill all the water is dried and give a mix.
8.Reduce the flame to low and wait for 5 minutes until done.
Layering the Biriyani:
1.Remove the rice to another bowl and to the same vessel layer some rice .
2.Now add half mutton masala and layer with rice,add some fried onion masala dats kept aside.
3.Again repeat the same by adding mutton masala and then again layer with rice and garnish with the fried onion coriander ,nuts.
4.Add ghee and cover with an aluminium foil.
5.Cook on very low heat upto 10 to 15 minutes.
6.Switch off the flame n mutton biriyani is ready to serve.
