Rice flour - 2 cups + for dusting
Water - 2 cups + 1 cup
Salt - as needed
Oil - 2 tbsp

1.In a vessel,boil 2 cups of water.
2.Add enough salt and take 2 cups of rice flour ,tip in slowly.Cover n cook on low flame for just 2 or 3 minutes.

3.Using a wooden spatula or spoon (as u prefer) mix it to form lumps like upma .Switch off .

4.Put it to a wide plate and take 1 cup usual drinking water in a bowl and keep it aside.Wet ur hands in it and mix the dough,repeat the same until u get a soft dough as for chappathi.

5.Make small balls out of it and take some flour in a plate for dusting.

6.Using a pathiri press,Press each ball by dipping in oil until thin pathiri is formed.Sprinkle,rice flour slightly on both sides using hand(take care not to b more,just little) and keep it aside in a plate.Repeat the same until all are used up.

7.Heat a non-stick tawa, when it very hot (u can see smoke coming out),lower to medium and place each pathiri and flip over after few seconds,flip it again and wait till puffs up.Take it to a wide plate.

Knead well to get soft pathiris and do not stack them when its hot,allow it to cool.
Add water accordingly,No problem if water is less when boiling,take care not to b more coz while u knead u wet ur hands to make soft pathiris.
U can cut the side using cutter to get round shaped pathiri .
Can serve with coconut milk by adding little salt,dip each pathiri in it and serve....Both adults and kids will love it....

Malabar kaipola

Nendra pazham/plantains - 3 chopped  roughly
Eggs - 2
Sugar - 1/2 cup or as per ur taste
Cashewnuts - 6
Raisins - 1 tbsp
Cardamom - 3 powdered
Ghee - 4 tsp
Coconut grated - 2 tbsp

1.Heat a sauce pan, add 2 tsp ghee and add the chopped plantains to it  and saute.

2.When it slightly turns colour, add sugar and saute until sugar melts completely and switch off.Keep aside.

3.In another bowl,beat 3 eggs and add powdered cardamom and mix.
4.Pour this over the cooked plantain and mix well.
5.To this add raisin and cashew made into pieces roughly along with grated coconut.Mix altogether.

6.Heat a frying pan on low flame,add 2 tsp ghee and swirl.
7.Now add the prepared mix as for kalthappam and close with a lid.Let it cook for upto 10 minutes.

8.After 10 minutes,Flip it over to a plate and reverse back as it is(upside down ) and cook the other side too for another 10 minutes and switch off.

Cut into pieces and serve!!!

Bird's Nest (quick and easy with step by step pics...)

Potato - 3 small or 1 big
Carrot - 1 medium
Salt - as required
Water - 1 cup to cook the vegetables
Egg - 2 + 1 beaten for coating
Onion - 1
Garlic - 2 pods grated
Ginger - 1 small piece grated
Green chilly - 1 slitted or chopped
Turmeric powder - 1/4 tsp
Pepper powder - 1/2 tsp
Garam masala powder - 1 tsp
Corriander leaves - 4 chopped finely
Vermicelli - as needed
Oil - 2 tbsp + for frying

1.Wash,Peel and cut the potatoes and carrot roughly,Add this to a pressure cooker along with a cup of water,salt and a pinch of turmeric powder,cook on medium until 3 to 4 whistles and switch off.Allow it to release pressure.

2.In a saucepan,add 2 egg along with water and salt,boil for 10 minutes and keep closed.
3.When potatoes are cooled ,remove to a bowl,discard water.Remove the skin of boiled egg and keep aside.
4.Slice the onion and grate ginger and garlic,slit green chilly and chop the corriander leaves.Heat oil in a pan,
add the sliced onion and saute till lightly brown.
 5.Add the grated ginger - garlic and slitted green chilly saute for few seconds .

6.Add turmeric powder,pepper powder,garam masala powder,mix well.Keep in low flame.
7.Mash the potato and carrot mix and add this to the prepared masala.
8.Same way break the boiled eggs and add it to the masala.
 9.Add the chopped corriander leaves and mix well.Switch off the flame.

10.Allow it to slightly cool and make small balls out of the mix and flatten it. Keep aside.
11.To a bowl,add 1 egg and beat well.
12.Break the vermicelli into small pieces and spread it on a plate.
13.Dip each flattened balls into the egg mix and den coat it generously with vermicelli.

14. Repeat the same with all the balls and keep aside for 15 -30 minutes .

15.Heat enough oil in a pan and when hot ,place the flattened balls into it gently.Fry till both sides turn golden brown.Remove to a plate with paer towel.

Serve hot !!!
